Soya Mint Pulao ( Quick Recipe for weekend )

Mint and Soya chunks Pulao is a delicious Indian recipe served as a Main dish. Mint flavored pulao is an easy to make instant rice dish to serve with onion/tomato raita in lunch or dinner. Flavorful green paste of fresh mint leaves, coriander leaves, coconut, ginger and garlic is sautéed with onion and then mixed with cooked rice to prepare pudina rice. It is a best option to give it in kid’s lunch box or serve as a light food in dinner. You can add any vegetables of your choice for this recipe. I have added soya chunk. This is a very quick and easy recipe with delicious aroma of mint along with the blend of spices.

 Ingredients
    • 2 cups Basmati rice soaked for 15 minutes
    • 2 medium onions julienne cut
    • 1 tbsp ginger-garlic chopped
    • 2 slit green chilli
    • 1 tsp cumin seeds
    • 1 tsp snauf
    • 1 star anise
    • 1 "cinnamon stick
    • 6 cloves
    • 1/2 cardamom powder
    • 2 Bay leaves
    • 1 /2 tsp turmeric powder
    • 1 tbsp Garam Masala powder
    • 4 tbsp Ghee
    • Salt to taste

    Mint paste masala :

    • Mint leaves 1 cup
    • 1/2 cup coriander leaves
    • 3 tbsp grated coconut
    • 4 green chili
    • 1 tbsp ginger-garlic chopped
    • 1/2 think yogurt
    • Grind all above ingredients to smooth paste.
 Method

    1) Heat 3 tbsp Ghee, roast all the whole spices (cumin, snauf, star anise, cinnamon, cloves, bay leaves). Saute for few seconds.
    2) Add the onion, ginger-garlic Chops, slit green chilli, turmeric powder, Garam Masala. Stir fry until onion turns light brown.
    3) Add the mint paste. Saute for 2-3 minutes in medium flame.
    4) Next add the Basmati. Mix gently for a minute.
    5) Add 3 cups of water. Salt to taste, some ghee. Mix well. (here we have 2 cups Basmati and 3 cups water. Since Basmati was soaked and it cooks faster than                sonamasuri, we add 1 cup less water.
    6) Pressure cook for 1 whistle only. Open the lid after 5mins.
    7) Serve the pulao with Raita.
