Prawns Ghee Roast Dum Biryani

A tasty and healthy Prawns Ghee Roast DUM Biryani with a Desi style. The prawns is marinated, roasted separate and then layerd with caramelized onion masala and basmati rice. This recipe is easy and tastes great with the blend of whole spices and ghee roasted prawns. Giving a special treat for all Sea food lovers in shape of Prawns Ghee Roast DUM Biryani ! ENJOY ! :P

 Ingredients
    • 1/2 Kg cleaned Tiger Prawns
    • 1 cup mint leaves+ cilantro leaves finely chopped
    • 4 medium sliced onions
    • 12 crushed garlic flakes
    • 1 tbsp coriander powder
    • 1/2 tbsp cumin powder
    • 1/2 tbsp turmeric powder
    • 1 tbsp Kasuri Methi
    • 2 small tsp Red chilli powder
    • Food color 1 drop of green mixed in 6-8 tsp rose water
    • Kesar mixed in little water

    Prawns Ghee Roast Marination: (30 minutes to 1 hour)

    • 2 tbsp Kasmiri Red chilli
    • 1 tsp turmeric powder
    • 1 tbsp Vineger
    • 1 tbsp ginger garlic paste
    • 1 tsp coriander powder
    • 1/2 tsp cumin powder
    • 1 big tbsp Ghee
    • 1/2 tsp sugar
    • salt to taste
    • 2 cup Basmati Rice ( Soak for 30 minutes )

    Whole Spices :

    • 1 tbsp cumin seeds
    • 1/2 tbsp saunf/feenal seeds
    • 1 mace/ javitri
    • 1/2 powdered nut meg
    • 2 star anise
    • 2" cinnamom stick
    • 6 cloves
    • 4 white cardamom pods
    • 2 black cardamom
 Method
  • Prawns Ghee Roast Dum Biryani Method-1

    Marinate the prawns for 1 hour in refrigerator. You can also keep it for less time if you have less time. But more the time for marination, it tastes better.

    Heat ghee : coconut oil 2 tbsp each. Add the marinated prawns.

    Stir fry the prawns for 8-10 minutes till done under medium flame. Keep it aside

    Heat 5 tbsp coconut oil in wide botton vessel. Fry the wholes spices one by one.

    Add the garlic toss for a while followed by Onions. Now add the turmeric powder, chilli powder, coriander powder, cumin powder and salt to taste. Fry well untill the onion formw caramel color along the masala mix.

    Making of the Basmati Rice:

    • Soak the basmati Rice for 30 minutes.
    • Add around 6 cups of water in a big vessel.
    • Add 1 tbsp shahi jeera, salt to taste.
    • Cook the rice 80 - 90%
    • When 80% of rice is done switch off the flame. Rest second batch (90%) gets automatically cooked in the boiling water.

    ( Note: for first layer we are cooking the rice for 80%, followed by second layer for 90% )

    Now divide the onion masala into two portions. Retain one portion in wide bottom vessel. Add the Prawn ghee Fry, followed by kasuri methi.

    Slowly spread the 80% cooked Basmati rice. Sprinkle some greeen food color and kesar water. Now add the remaining second portion of onion masala followed by mint-cilantro chops. Next add the second 90% cooked Basmati, repeat the same as before after adding the rice. Add 2 tbsp of melted ghee.

    Now keep the vessel under an iron skilet and close the lid. Place a heavy matter above the lid and set the biryani for dum at 10-15 minutes under low flame.

    When done serve along Raita of your choice. You can see that the rice has cooked well in dum. Rice looks perfect like petals.
