Mutton Pepper Roast

Mutton Pepper fry - a tasty and a must try recipe for the mutton lovers. This recipe is very easy, it contains Mutton Ghee fried in pepper. You can also use Curry leaves. I have used chopped coriander leaves along final stir fry procedure. Mutton need to be roasted until it is dry. The aroma of Ghee along with pepper flavor of Mutton is too good.

    • 1/2 kg Mutton
    • 1 star anise
    • 1 "cinnamon stick
    • 1 tsp cumin seeds
    • 1/2 tsp snauf
    • 6 cloves
    • 2 tbsp ginger-garlic chopped
    • 2 onions finely chopped
    • 1/2 tsp turmeric powder
    • 1/2 tsp cardamom powder
    • 1 tbsp pepper powder
    • 1 tomato chopped
    • 2 tbsp coriander leaves chopped
    • 4 tbsp Ghee (depending on your preference)
    • 2 tbsp coconut oil (depending on your preference)
    • Salt to taste

  • Mutton Pepper Roast Method-1

    1) Heat 2 tbsp coconut oil :Ghee in cooker. Roast whole spices (star anise, cinnamon stick, snauf, cumin seeds, cloves). Add 2 tbsp ginger-garlic chopped, stir fry for a minute.
    2) Add the chopped onions. Fry until light brown. Add turmeric powder and salt. Stir fry well 2-3 minutes.
    3) Add the Mutton. Stir fry well 2-3 minutes. Add 5 cup of water. Mix well. Pressure cook for 15-20 whistles.
    4) Separate Mutton pieces from stock. Use stock as soup. Use Mutton pieces for pepper roast procedure.
    5) Heat 2 tbsp Ghee.. Add the Mutton pieces. Stir fry well.
    6) Add the pepper powder, followed by green chilli. Mix well.
    7) Add the chopped tomatoes. Saute. Add cardamom powder, coriander leaves. Stir fry well until Mutton gets roasted well and leaves oil. When water evaporates and Mutton roast ready serve along meals as side dish.
