Chocolate Gulab Jamun

Choco Gulab jamun. A simple little work gives one more variety of sweet especially to those who are found of chocolates and gulab jamun as well. You can also serve it at children's party. Also you try making it during you family get together. The exact proportion of ingredients is very must in making of a perfect homemade Gulab Jamun. Have a try !

  • For Jamun Mix :

    • 2 cups Milk powder [if your using khoya/mava/evaporated use 1 1/2 cup]
    • 2 tsp coco powder
    • 1 tbsp fine sooji/rava/semolina
    • 2 tsp chocolate milkshake powder [you can also use fine chocolate powder is you have]
    • 4 tbsp maida
    • 1 tsp cooking soda
    • 1 tsp fine powdered cardamom
    • Enough of milk to bind the Jamun dough
    • 2 tbsp Cashew/Badam pieces
    • 4 cardamoms powdered in a mortar-pestle

    For the sugar syrup :

    • 250 gms sugar, about 1 & 3/4 cup sugar
    • 1 cup water
    • 1 tbsp rose water

    Add the milk powder, followed by maida, coco powder, chocolate milkshake powder,semolina, cooking soda & cardamom powder. [If your using Khoya- take khoya/mava/evaporated milk in a bowl. mash it very well. there should be no lumps. Than add the rest ingredients to make a dough].

    Mix all ingredients well, add milk and gather together to form a dough with milk. don't knead. Just gently mix. if you are unable to form balls or if the mixture appears dry, then add a few teaspoons of milk. cover the dough and keep aside for 10-20 mins.

    Making of sugar syrup:
    • Dissolve sugar in water. heat the sugar solution till it become sticky. you just need to switch off the fire before the syrup reaches a one thread consistency.
    • Add rose water and stir. Keep the sugar solution aside. On cooling if the sugar syrup crystallizes, then just add 2 to 3 tbsp water and warm the syrup again. it will again return to a liquid state.
    • Simulaneously start making small balls from the dough. Keep aside for 5 minutes.

    • Heat oil till its medium hot, add 2-3 tbsp ghee so that you get nice aroma. lower the flame and wait for a minute. then gently place the gulab jamuns in the oil.
    • Once they start to have tiny golden spots, keep on rotating them in the oil, so that the gulab jamuns are evenly browned.
    • Remove the gulab jamuns and then drain them on kitchen paper towels to remove excess oil.
    • Then place the hot gulab jamuns in the sugar syrup. Continue frying the gulab jamuns this way in batches.
    • When all the jamuns are placed in the sugar syrup, then keep the whole pan with the sugar syrup and gulab jamuns, on a low flame for a few minutes till the jamuns become soft.
    • Heating helps the gulab jamuns to absorb the syrup and become soft. the jamuns increase a bit in size. Don't over cook as then the jamuns break.
    • Serve Gulab Jamuns warm or at room temperature. You can also chill the gulab jamuns and serve them cold. Garnish the gulab jamuns with rose petals or almond or cashews. You can use any garnishing ideas of your choice!

     [Note: if the sugar syrup has impurities, then add milk and simmer. a layer of scum will be formed. remove this layer with a spoon]
