Chicken Cafreal | The Goan Portuguese Chicken Cuisine

Cafreal is a spicy chicken preparation consumed widely in the Indian state of Goa. The preparation originated from the Portuguese colonies in the Africancontinent. It was introduced into the Goan cuisine by the Portuguese and the African soldiers serving under the Portuguese. The generic preparation involves green chillies, fresh coriander leaves, onion, garlic, ginger, cinnamon, pepper, chilli, mace, clove powder and lime juice or vinegar. Chicken Cafreal is always made from whole chicken legs, flavoured with the spices and herbs and then shallow fried. Chicken Cafreal is usually accompanied by potato wedges and lime wedges.

    • Chicken medium cut - 1kg
    • 5 tbsp each Ghee and oil
    • Salt to taste

    Making of Cafreal Masala paste for marination :

    Grind below ingredients to smooth paste :

    • 2 cup fresh Coriander leaves
    • 1 " ginger piece
    • 10 garlic cloves
    • 1 tsp pepper corn
    • 1" cinnamon stick
    • 6 cloves
    • 2 medium onions
    • 1 tbsp garam masala powder
    • 1 tsp turmeric powder
    • 1 cup water (mix 1 tbsp vinegar in water. You can also use lemon juice)
    • (you can also add a little rum while making paste)

    1) Marinate the chicken pieces with the Cafreal paste. Add salt as required. Mix well, keep aside for 2-4 hours in fridge.

    2) Heat Ghee and oil in a voke. Fry the Marinated chicken pieces for 10 minutes on both sides under low to medium heat.

    3) Meanwhile fry potatoes with little of oil.

    4) Next add the remaining marinate Cafreal masala along the fried potatoes to the chick mix well. Adjust salt if needed.

    5) Cook until the chicken blends well with the Cafreal masala and is dry. Keep stirring and let the heat be low. This will need around 10-15 minutes for the dish to get dry and ready.

    6) Serve the Chicken Cafreal with bread or rice.
